Nilgiri is the connoisseur's secret among Indian teas: cleaner and more aromatic than Assam, rounder than Darjeeling, and famously resistant to clouding — which also makes it a superb iced tea.
Brew one heaping teaspoon per cup with freshly boiled water for 3 to 4 minutes. Lovely plain, with lemon, or iced — it stays bright and clear every way.
