Iron Goddess of Mercy is China's most celebrated oolong: tightly rolled jade leaves that unfurl into a cup of orchid fragrance, creamy body and a sweet, lingering finish that Chinese tea drinkers call the "returning flavour."
Brew one heaping teaspoon per cup with water around 90°C for 3 minutes, and re-steep several times — the second and third infusions are often the best. Drink it plain, unhurried.
