Oolong teas are fermented only until the leaf edges turn brown, then gently fire-dried — a partial oxidation that creates flavours found nowhere else in the tea world. Formosa Oolong hails from Taiwan, historically called Formosa and still the source of the world's finest oolongs.
The cup sits beautifully between green and black: amber-hued, smooth and gently toasty, with notes of ripe peach and honey and no astringency to speak of. It is the classic introduction to Taiwan's tea mastery.
Brew one heaping teaspoon per cup with water around 90°C for 3 to 5 minutes, and re-steep the leaves at least once more. Best enjoyed plain.
