The jade-green "Spiral of Spring" is a very elegant, handpicked and carefully processed green tea with an abundance of white tips and a delicately twisted leaf. Pi Lo Chun (Bi Luo Chun) is one of China's most famous greens, celebrated for its lively freshness, hint of natural sweetness and clear, light cup.
Traditionally grown among fruit trees — which the leaves are said to borrow their faint fruity fragrance from — this is a connoisseur's tea that remains wonderfully approachable.
Brew one teaspoon per cup with water around 75 to 80°C for 2 minutes, and expect beautiful second and third infusions. Drink it plain and unhurried.
